Finca El Triunfo is located in Palermo Huila, Colombia and run by Audon Solano. The farm sits at an elevation of approximately 1,800 m.a.s.l. and consists of 26 hectares in total. Of those 26 hectares, approximately 3 hectares are planted in coffee, with about 4,000 trees of Caturra and 10,000 trees of V. Colombia. This lot is comprised of both varieties, as they are intertwined within the lots. Audon works with a fermentation recipe that we have to come to really love: 24/36 hours, meaning the coffee is first fermented in cherry for 24 hours and then de-pulped and dry fermented in the tank for an additional 36 hours. Upon washing, the coffee is laid out to dry in a greenhouse style structure, for approximately 12-18 days depending on the climate.
Audon was introduced to us by another producer in Palermo, and an example of how our partnership and project in Santa Maria with Asociación La Victoria is attracting producers from nearby municipalities. In fact, Audon has enjoyed working with us and the association so much, that he officially joined in 2019. Santa Maria and Palermo are neighboring towns with the same caliber of growers. This is now our 4th year working with Audon (5th year in Santa Maria) and we continually buy his entire production; each harvest is just as consistent as the last!
Aside from coffee, the farm also has banana and tangelo trees, a fruit that perhaps matches the flavor of his coffee!
